Living Too Large

 

Fall! Apples! Easy! Delicious! Four great words, right? I think so. I like easy stuff cause I am lazy. Yes, I admit it. But I really do like easy and delicious and nutritious food.

2 apples , cored
2 tablespoons brown sugar
2 tablespoons melted margarine
2 tablespoons oats, rolled (cooked)
2 teaspoons chopped pecan
1 tablespoon raisins
1 teaspoon cinnamon
1/4 cup apple cider
2 tablespoons vanilla yogurt

1. Core apple.

2. In a bowl, mix sugar, margarine, oats, pecans, raisins, and cinnamon. Pack the apples with equal parts of the mixture.

3. Place in bowl and pour the apple cider into the bottom. Microwave on high for 5 minutes.

4. Serve topped with vanilla yogurt.
